A Crossing of North Africa is a chef-led evening inspired by the food cultures of Egypt, Tunisia and Morocco. Taking place on 27 and 30 September, it brings together generous seasonal cooking, layered spice and a table shaped by warmth, depth and hospitality.

The Menu

Upon Arrival

Cucumber & Mint Gin Cooler

Local gin, cucumber juice, fresh lime and garden mint, topped with sparkling soda.
Served with spiced aromatic nuts and warm deep-fried olives.

First Course

Gazpacho Tunisienne

Chilled tomato and sweet red pepper soup, finished with cucumber granita and coriander oil.

Second Course

Cured Stone Bass Crudo

Slices of wild stone bass cured with native Exmoor blackberries, served with heritage tomatoes and coriander oil.

Main Course

Tangier Lamb Shoulder & Basmati Mujadara

Slow-braised Exmoor lamb shoulder, glazed with mandarin and star anise marmalade, served over basmati rice and green lentil mujadara, with orange, garlic and fresh coriander gremolata.

Accompanied by a shared platter of warm Exmoor tromboncino squash and yellow courgettes, lightly tossed with gentle North African spices.

Dessert

Deconstructed M’hancha

Crisp, buttery layers of golden pastry with spiced almond paste, orange blossom and warm honey, with hibiscus-poached Lynton-grown pears.

To Finish

Digestif Tea

An infusion of fresh mint and orange blossom.

North Africa

Across Egypt, Tunisia and Morocco, food is shaped by warmth, depth and contrast — spice, herbs, citrus and slow-cooked savoury notes working together in generous, expressive ways.

This evening draws on those shared threads, using Exmoor produce and local ingredients to reflect North African influence with fragrance, richness and a strong sense of place.

From slow-cooked tagines and spiced grains to sharp pickles, herbs and citrus, it is a cuisine built for sharing — generous, expressive and quietly complex. This Crossing of North Africa brings those elements together in a way that feels both grounded and transportive, shaped as much by atmosphere and rhythm as by what is on the plate.
