Along the Southern Route is a chef-led evening inspired by the food cultures of Burma, Thailand, Malaysia, Indonesia and Vietnam. Taking place on 6 and 9 December, it brings together bold, balanced cooking shaped by spice, fresh herbs and fire, with a table designed for sharing, contrast and rhythm.
Stretching from Burma through Thailand, Malaysia, Indonesia and Vietnam, Southeast Asia is defined by intensity, balance and contrast — heat, sweetness, acidity and depth working together in precise, expressive ways.
This is food shaped as much by street kitchens and markets as by family tables — fast, fragrant and layered, built on fresh herbs, fermented sauces, citrus and fire. It is a cuisine that moves between smoke and brightness, richness and sharpness, with an energy that feels immediate and alive.
Along the Southern Route draws on those shared threads, using Exmoor produce and local ingredients to reflect Southeast Asian influence with bold seasoning, fresh herbs and a strong sense of rhythm. Expect grilled meats, aromatic broths, spiced sauces, pickles and rice — food designed to be shared, generous and full of contrast.
