An exploration of West Asia and the Caucasus, inspired by the Silk Route and shaped by the seasons and provenance of Exmoor.

Silk Route Welcome Cocktail

“Tarkhun”
Enjoy our traditional Caucasian cordial infused with tarragon and cucumber, laced with gin and a splash of lemon juice.

To Follow

“Khachapuri”
A classic Georgian cheese-filled bread made with traditional Khorasan flour. Warm and indulgent, topped with a free-range egg yolk — perfect for tearing and sharing.

Butternut Squash “Dyushbara”
Delicate, hand-folded egg pasta dumplings served in a clear chicken consommé with herb vinegar.

Vine-Wrapped Sea Trout
Fresh fish wrapped in vine leaves and served with a walnut and rhubarb sauce, balancing richness with bright, sharp notes.

Yoghurt-Marinated Pork “Mtsvadi”
Traditional Caucasian skewered pork, marinated in spiced yoghurt, sprinkled with pomegranate seeds, and served with kindzmari — a vibrant sauce of fresh coriander, garlic and wine vinegar.

Regional Accompaniments
Stuffed quince, homemade Caucasian pickles, and a salad of locally foraged tri-cornered leek and carrot. Served with Armenian unleavened lavash flatbread.

Dessert

Spirit-Infused Profiteroles
Cracked profiteroles infused with Armenian cognac, filled with crème mousseline and served with a brandy liqueur.

The Caucasus

Stretching between the Black Sea and the Caspian, the Caucasus is home to some of the most generous and distinctive food cultures in the wider region. Across Georgia, Armenia and Azerbaijan, the table is shaped by bread, herbs, spice, smoke, sourness, nuts, pulses, grilled meats, dumplings, yoghurt, pickles and fruit. There is depth and comfort in the cooking, but also brightness — pomegranate, dill, tarragon, coriander, sumac and sharp dairy all lifting richer dishes into balance.

While each country has its own traditions, the cuisines speak to one another through shared landscapes, old trade routes and a strong culture of hospitality. This evening takes its cue from that wider conversation: food that is layered, generous and full of character, rooted in place but shaped by movement, memory and exchange.
